Stop by the circulation desk and pick up a copy of the
cookbook, sign up to bring a dish from our list of YUMMY dishes and join us on
March 19th for tastings and discussions.
About Karen, our Healthy Cookbook Club Facilitator: Karen DiPietro, RDN, CDE is a registered
dietitian and certified diabetes educator at Ellen Byron and Associates where
she provides individual nutrition counseling and diabetes education. Karen also facilitates after school
nutrition and cooking programs for Kids’ Test Kitchen. She established a
nationally accredited diabetes education program and has facilitated diabetes
education and support groups in many communities. Karen is passionate about helping people eat
healthier by tailoring eating strategies to individual preferences and
lifestyle, leading to sustainable changes in eating behavior. She believes
people need to stop restrictive diets and focus on quality food and home-cooked
meals. To that end, she is interested in providing practical, hands-on
nutrition education through cooking classes, food demonstrations, supermarket
